The Indio Montepulciano from Bove is a powerhouse of a wine, full bodied and smooth with notes of beeswax and chocolate.It pairs wonderfully with full flavoured pasta dishes, roast red meats and game dishes. This red wine is medium to full bodied and shows how superb Montepulciano really can be.
Cantina Bove was established in 1930 and has since modernised the winery, which now boasts a high-tech bottling plant. The estate comprises 60 hectares of well situated vineyards and under the watchful eye of oenologist Dr Vittorio Festa, the vinification techniques ensure the production of the highest quality wines from low yields, with rigorous grape selection and refined ageing in oak barrels.The Bove style is to make well textured, mellow red wines showing good typicity and white wines that are fruity and full of character.
Vinification
Extended skin maceration. Fermentation and maceration with delestage, for roughly three weeks in stainless steel vats. After blending the cuvees, the resultant wine spends 12 months in Allier oak barriques. The wine is bottled unfiltered and spends 6 months in bottle prior to release.
